About This Wine:
Paso Robles is situated roughly half-way between Los Angeles and San Francisco, and over the past 25 years has joined California’s Napa Valley, Alexander Valley and a handful of other areas as a dependable producer of excellent Cabernet Sauvignon.
For the 2016 vintage, West Ridge had perfectly ripened Cabernet grapes with which to work. The goal was to craft a wine that reflected both the region and the vintage, and our tasting panel was impressed by the quality of the finished product. Part of that had to do with the aging process selected.
The wine was aged for seven months in American oak barrels, and that’s what accounts for the big vanilla-like impression as the wine enters the mouth and in the long finish. Built for short-term aging but drinking beautifully now, it’s a delicious example of Paso Robles Cabernet.
